Vegetable Ramen
Ramen is a great meal when out and about. It’s a relaxing dish to create as you let it simmer the broth and soak the noodles. Ramen is also amazing because you can fill it with all sorts of different ingredients that you have available - there’s no right or wrong way, you can make it your style.
In this recipe, I used a tin of vegetable stock, which is perfect for taking on a walk.
Ingredients
- Tin of vegetable stock
- Packet of vegetables (broccoli, beans, baby sweetcorn)
- Ramen noodles
Method
- Bring a pot of stock to the boil
- Add ramen noodles and add the vegetable mix on top
- Cover with a lid and boil for 5 mins
- Enjoy!
Suggested variations
- Rather than using vegetable stock, you can use miso paste and water to make a lovely broth
- Edamame beans go well, as would a sprinkling of spring onions
- Throw in some finely sliced red chilli at the end to spice things up
- Dried seaweed also can be added for an authentic flavour
