Vegan lentil burger
This dish takes a little at home preparation, but the pay off is worth it! A really tasty, smokey vegan burger that provides a nice portion of protein. Served in a crusty roll, it would be perfect for cooking on a BBQ, an open fire or on a cooking stove. For my method, its important to get lentils in those microwavable packets. You can of course used tinned lentils if that is all you can find, but it’ll e a little messier! It’s really tasty - restaurant quality!
Ingredients (enough for 2 - 3 burgers)
- 1 packet green lentils
- Flour (1 tbl spn)
- Harissa paste (4 - 5 tsp spn)
- Crispy fried onions (1 tbl spn)
- Cooking oil
Method
- While still in the un-opened packet, crush and mush the lentils into a paste. Once into a paste like consistency, empty out into a bowl
- Add a table spoon of flour
- Add harissa paste to taste
- Sprinkle on some crispy fried onions to add a bit of texture and more flavour
- Mix to a firm consistency. Add additional flour if the mixture seems too wet
- Add one patties worth into the burger press and make the burger
- Fry (or BBQ) for 5 - 10 mins until cooked through
Suggested variations
- It’s a burger! So add whatever you like on a burger!
- Would go great served with some couscous and a fresh salad
