Tomato Bean Stew
A warming tomato bean stew is a great pick-me-up after a walk, or even part way through a long walk. With just a few simple ingredients you can make a deep smokey flavoured stew that is perfect with couscous.
This recipe uses a great ingredient for simple outdoors cooking - pizza sauce. It’s essentially tomato passata, onion, garlic and herbs all combined for you in an easy to carry tin. Perfect for quickly making a tomato sauce to go with any kind of pasta or couscous. Here, we’re going to add paprika to the pizza sauce to get that smokey flavour for the base of our stew.
Ingredients
- Mixed beans (1 tin)
- Pizza sauce (½ tin)
- Paprika powder (2 tsp)
- Couscous
- Water
- Bouillon stock powder
Method
- Drain about half the water from the tin of mixed beans and add to a pot
- Add in the pizza sauce and paprika powder and stir
- Cook for about 10 mins and then leave to the side
- Bring another pan (or mess tin) to the boil with water and add the couscous and bouillon stock powder - leave that off the flame for 3 - 4 minutes to absorb the water
- Serve the bean stew on the couscous
Suggested variations
- You can find spicier varieties of paprika to add a bit more of kick
- You could fry some frozen chopped onions and frozen chopped peppers to add more to the stew
